Tarte Tatin

How to Make Tarte Tatin

(A classic French upside-down caramelized apple tart)

Ingredients

  • 6–7 medium apples (firm varieties like Granny Smith or Honeycrisp)

  • 100 g (1/2 cup) unsalted butter

  • 150 g (3/4 cup) granulated sugar

  • 1 sheet puff pastry (or shortcrust pastry)

  • Optional: cinnamon or vanilla extract for extra flavor

Instructions

1. Prepare the apples

  1. Peel, core, and quarter the apples.

  2. Cut large pieces if needed so they fit nicely in the pan.

2. Make the caramel

  1. Preheat the oven to 190°C (375°F).

  2. In a heavy, oven-safe skillet or pan, melt butter over medium heat.

  3. Add sugar and cook until it melts and turns golden brown, stirring gently.

  4. Optional: add a pinch of cinnamon or a few drops of vanilla.

3. Arrange the apples

  1. Carefully place apple quarters upright in the caramel in the pan.

  2. Cook for 5–8 minutes on medium heat so the caramel slightly thickens and coats the apples.

4. Cover with pastry

  1. Roll out the puff pastry to slightly larger than the pan.

  2. Place the pastry over the apples, tucking the edges down around the apples.

5. Bake

  • Bake in the preheated oven for 25–30 minutes, or until the pastry is golden brown and puffed.

6. Invert the tart

  1. Let the tart cool for 5–10 minutes.

  2. Place a large plate over the pan and carefully flip it to release the tart upside down.

  3. Be cautious—caramel will be hot.

7. Serve

  • Serve warm or at room temperature.

  • Optional: serve with whipped cream, vanilla ice cream, or a dusting of powdered sugar.
