Haricots Verts


How to Make Haricots Verts

(French-style sautéed green beans)

Ingredients

  • 300–400 g haricots verts (thin French green beans)

  • 1–2 tablespoons butter

  • 1 tablespoon olive oil

  • 2 garlic cloves, minced (optional)

  • Salt and black pepper

  • Lemon zest or juice (optional)

  • Toasted almonds or shallots (optional for garnish)


Instructions

1. Trim the beans

  • Rinse the haricots verts under water.

  • Trim the ends if needed.

2. Blanch the beans

  1. Bring a pot of salted water to a boil.

  2. Add the haricots verts and cook for 2–3 minutes, until bright green and slightly tender.

  3. Immediately transfer them to a bowl of ice water to stop the cooking.

  4. Drain well.

3. Sauté the beans

  1. Heat butter and olive oil in a large pan over medium heat.

  2. Add the blanched haricots verts.

  3. Sauté for 3–5 minutes, stirring occasionally.

  4. Add garlic (if using) during the last minute of cooking so it doesn’t burn.

4. Season

  • Sprinkle with salt and black pepper.

  • Add a squeeze of lemon juice or a bit of lemon zest if desired.

5. Serve

  • Serve hot as a side dish.

  • You may top with toasted almonds, crispy shallots, or extra butter for a richer flavor.
