How to Make Steak Frites
Ingredients
For the Steak

2 ribeye, sirloin, or flank steaks (about 2–3 cm thick)

Salt and black pepper
-
2 tablespoons butter
-
2 tablespoons olive oil
-
2 garlic cloves, lightly crushed
-
Fresh thyme or rosemary (optional)
For the Frites (French Fries)
-
3–4 large potatoes
-
Vegetable oil for frying
-
Salt to taste
Instructions
1. Prepare the fries
-
Peel the potatoes (optional) and cut them into thin strips.

Rinse the potato strips in cold water and pat them dry with a towel.

Heat vegetable oil in a deep pot to 160°C (320°F).
-
Fry the potatoes for 4–5 minutes until soft but not golden.
-
Remove and let them rest on paper towels.
2. Cook the steak
-
Season both sides of the steak generously with salt and pepper.
-
Heat a pan over high heat and add olive oil.
-
When the oil is hot, add the steaks.
-
Sear for 2–4 minutes per side depending on your preferred doneness.

Add butter, garlic, and herbs. Tilt the pan and spoon the melted butter over the steak for extra flavor.

Remove the steaks and let them rest for 5 minutes before serving.
3. Finish the fries

Increase the oil temperature to 190°C (375°F).

Fry the potatoes again for 2–3 minutes until golden and crispy.

Drain and sprinkle with salt.
4. Serve
-
Plate the steak alongside the crispy frites.
-
Add extra butter or a sauce (béarnaise, peppercorn, or garlic butter) if desired.
-
Serve immediately while hot.
