Haricots Verts
How to Make Haricots Verts
(French-style sautéed green beans)
Ingredients
-
300–400 g haricots verts (thin French green beans)
-
1–2 tablespoons butter
-
1 tablespoon olive oil
-
2 garlic cloves, minced (optional)
-
Salt and black pepper
-
Lemon zest or juice (optional)
-
Toasted almonds or shallots (optional for garnish)
Instructions
1. Trim the beans
-
Rinse the haricots verts under water.
-
Trim the ends if needed.
2. Blanch the beans
-
Bring a pot of salted water to a boil.
-
Add the haricots verts and cook for 2–3 minutes, until bright green and slightly tender.
-
Immediately transfer them to a bowl of ice water to stop the cooking.
-
Drain well.
3. Sauté the beans
-
Heat butter and olive oil in a large pan over medium heat.
-
Add the blanched haricots verts.
-
Sauté for 3–5 minutes, stirring occasionally.
-
Add garlic (if using) during the last minute of cooking so it doesn’t burn.
4. Season
-
Sprinkle with salt and black pepper.
-
Add a squeeze of lemon juice or a bit of lemon zest if desired.
5. Serve
-
Serve hot as a side dish.
-
You may top with toasted almonds, crispy shallots, or extra butter for a richer flavor.
